Strawberry Basil Jam


1 lb. Organic Strawberries, preferably homegrown (can substitute recipe with wild foraged strawberries) or from a local grower 

1/2 Cup Pure Cane Sugar

1 Tbsp Water

1 Tbsp Lemon Juice

3 Tbsp Fresh Basil 

Chop the strawberries into a medium saucepan and mash up with a fork. Add your sugar, water and lemon juice. With the heat on low, stir consistently until the sugar has dissolved, about 10-15 minutes. Turn off heat; Chop your basil into small pieces, and toss them into your jam. At this point, if you like a chunky consistency you may leave your preserve as is, or take an immersion blender to puree to a consistency that you like. Place the saucepan back on a medium heat, and let it reach a boil for about 15 minutes, stirring consistently. You'll know you're done when your jam is thickened and sticks to the back of a spoon. Let it cool until it is manageable, and pour into a few spare mason jars and enjoy!
