Spicy Sweet Potato Beer Fries

We all need something to soak up the beer after a long day. These sweet and spicy fries do just the trick. (And they do it well).

1½ - 2 lbs organic yam, cut into matchsticks

1 large bottle organic canola oil

1½ tsp paprika

¼ tsp cayenne

sea salt

⅓ cup mayonnaise

4tsp organic ketchup with cayenne mixed in (to taste)

Place the matchstick fries in hot organic canola oil (about 350 degrees). Fry about 5-10 minutes, until golden brown. Remove from the oil and drain. Sprinkle with paprika, cayenne and salt and toss until well coated. Serve with spicy ketchup and mayonnaise.
