Egg, Spinach, Artichoke & Roquefort Toast Stack

3 Large Slices Of Roquefort  (substitute with another cheese if this one is not to your liking)

3 Slices Of Toast  

1 egg

6 Artichoke Hearts, sliced

6 Large Spinach Leaves

1 Large Garlic Clove

Salt, Pepper to taste

Prepare your artichoke hearts so you have only the hearts (or buy store-bought artichoke hearts).  Sauté your spinach leaves with garlic, olive oil, salt and pepper. When tender, remove all water. Now, cook your eggs to preference, we like ours fried sunny side up. Toast your bread and begin assembly; On the first piece of toast place a slice of cheese, sliced artichokes, 2 spinach leaves. Follow the same layering for each piece of toast and stack the together. Finish with your egg on top and enjoy.
