Peaches And Honey Cream Cheese Muffins Peach Season

Hit your local farmers markets or peach growers.  

2 cups organic spelt flour

½ cup organic brown sugar

1 teaspoon cinnamon  

2 tea­spoons bak­ing pow­der

¼ tea­spoon salt

1 cup local milk

1/2 cup organic sour cream

1 egg

2 table­spoons but­ter, melted

2 fresh, seasonal peaches, diced

½ cup cream cheese

1 table­spoon honey

Add your milk and sour cream into a bowl and mix to combine. Add in your egg, blend it in, following by the melted butter. In a separate medium bowl, mix your dry ingredients; your flour, sugar, cinnamon, bak­ing pow­der and salt. Once mixed, add the dry ingredients to the wet ingredients in three sections, mixing thoroughly each time. Fold in your diced peaches. Once ready, in another bowl, mix together cream cheese and honey. When everything is prepared place a (very) large teaspoon of batter into your greased muffin tin. Place a small spoonful of the cream cheese mixture on top of each muffin and cover it with another spoonful of batter. Repeat this until each muffin tin is filled. Bake for 20-25 minutes at 365F.
