Double-Churned Maple Bacon Ice Cream

Summer may be over, but that is no excuse for not trying homemade double-churned creamy Maple Bacon Ice Cream.

You'll need an ice cream maker. We recommend White Mountain's 6-QT Hand-Cranked Ice Cream Maker. Order yours.

5 Eggs Yolks

1 Tsp Salt

1/2 Cup Sugar

2 Cups Whole Milk

4 Cups Heavy Cream

2 Cups Maple Syrup

6 - 12 Smoky Bacon Strips

In a medium bowl, add salt, sugar and egg yolks. Whip until mixture reaches a pale yellow. Transfer to a large pot and stir-in milk over medium heat. Slowly bringing the mixture to a scald (just before a simmer). At this point, remove from heat, add maple syrup and chill in the refrigerator for 30 minutes. While waiting, cook your bacon as you like it - the crispier the better. Cut the strips into small crunchy bites. When your mixture has cooled, remove from fridge, stir in the cream and transfer into your ice cream maker. Follow the manufacturers instructions. Once the ice cream is ready, stir in the crunchy bacon bits and transfer to a container. Cool about 2 hours in your freezer before serving.
