Homemade Maple Sweetened Oven Beef Jerky

5 Lbs. Local, Organic, Fresh Lean Brisket 

15 - 20 oz. Soy Sauce 
15 oz. Worcestershire Sauce 
15 - 20 oz. Teriyaki sauce 
4 tbsp Maple Syrup 
2 tbsp Garlic Powder 
2 tbsp Onion Powder 
3 tbsp Cayenne Pepper (or to taste)
2 - 4 oz. molasses for even more flavour (optional)

Note: For extra kick, we always add some sliced fresh chillies. Goes great with the sweetness of the maple syrup.

Trim as much fat off the meat as possible (it is the fat that will spoil, not the meat). Pre-freeze your meat, just lightly until crystals form - this will aid in slicing the meat as thinly as possible allowing for a quicker drying time. Add all ingredients into a large bowl, and whisk until smooth. Slice your meat, the sharper the knife the better, into thin bite-size strips. Place your strips into the marinade bowl and coat all pieces. Let sit for at least 24hours - stirring occasionally to re-coat. Preheat your oven to 160F, and place your meat on directly on the highest two racks available. Place cooking trays or aluminum foil on the bottom to catch drippings. When significant dripping has stopped, flip the meat over. It should take approximately 4.5 to 6 hours depending how many and how thin the meat was sliced.
