Left-Over Ham And Turkey Poutine
What do you do with your holiday leftovers?
Left-over Ham and Turkey Meat, (local and organic)
1lb Potatoes, cut into thin wedges
6 slices Maple Bacon
500g Cheese, cut into 1cm cubes (cheddar, gouda or any soft cheese your prefer)
Chilli Flakes (Optional)
Pre-heat oven to 385F. Slice your potatoes and lightly cover with organic sunflower oil (allows them to become crispier), salt, pepper and chilli flakes to taste. Bake for about 30 minutes or until golden. Meanwhile, cook your bacon until crispy, and cut into small pieces. Using the bacon oil, re-fry your turkey or ham (or both) in the oil until browned. Cut into bite-sized pieces. Re-heat your left-over gravy or purchase some from your local, organic butcher (or make your own). When the potatoes are ready, transfer into an oven safe dish. Cover generously with cheese, bacon, turkey and ham. Place back in oven for about 5 minutes, until the cheese begins to melt. Remove and drown in gravy.
