Since 2009, The LEAF Organization (Leaders in Environmentally Accountable Foodservice) has been aiming to help the Canadian Foodservice Industry reduce its environmental impact. Providing knowledge to establishments of all sizes, LEAF supports successful business practices while promoting energy, water and waste reduction. 'LEAF Certified' restaurants must undergo on-site reviews in 10 categories of sustainability; including energy use, food purchasing, water use, chemicals, building and location. As supporters of the 'farm-to-fork' philosophy they are also encouraging restaurants to purchase produce from local farmers and are leading communities to broaden the range of innovation and sustainable thinking.
