Kale Caesar Salad


1 Large Bunch Kale, red or green, broken into bite size pieces

3 tbsp Balsamic Vinegar    

3 Cloves Garlic, crushed 

1 tbsp Anchovy Paste (optional)

1 tsp Dry Mustard

Splash Worcestershire Sauce

1/4 Lemon Juice


Olive Oil

Place kale in a large bowl. Combine your balsamic, garlic, anchovy past, mustard, worcestershire sauce, lemon juice and salt into small bowl. Mix until all ingredients are combined. Then, slowly pour in olive oil while whisking constantly; until sauce reaches a thickened emulsified state (about 1/4 cup olive oil). Pour sauce over kale, and toss until all pieces are covered. Garnish with freshly grated parmesan.
