A flavoured salt can be one of the simplest things to make; and the best for finishing any dish. To make all you need is rock salt (or course sea salt), your spices and a mortar and pestle (or blender) and a container to store your salts. It's easy, inexpensive to make and highly rewarding. The varieties are endless; here are a few of our favourites.

Peppercorn, Chilli Flakes, Ginger - Mix about a tablespoon of each ingredient into your mortar, add a cup of salt, grind until desired consistency.

Jasmine Salt - Grind 2 - 3 tablespoons of jasmine tea pearls with your salt; place into a jar with a jasmine tea bag at the bottom for a more enhanced flavour.

Spicy Smoked Paprika - This bold flavoured salt requires 1 - 2 tablespoons of smoked paprika ground with your rock salt.

Lemon, Orange and Mint Infused Salt - Grate the rind of your citrus, add in dried mint (the moisture in the salt brings out the flavour of dried herbs) and pound with your rock salt.

Grapefruit, Lavender, Vanilla - Grate the rind of one grapefruit, add lavender to taste, and a 1/2 tsp vanilla beans.
