Country-Style French Onion Soup
The ultimate fall comfort food.
6 Large Red/White Onions
1Tbs Olive Oil
2 Cloves Garlic, minced
8 Cups Beef Stock (preferably homemade)
1/2 Cup White Wine
2 Bay Leaves
1tsp Dry Thyme
1 1/2 Cups Grated Gruyere and Parmesan
In a large pot, place olive oil and onions, on medium heat. Let onions brown and begin to caramelize - about 30 mins. When golden, add sugar and sauté another 10 mins. Then, add the minced garlic, stir in for about a minute and add your beef stock, white wine, bay leaves and thyme. Simmer like this until stock in slightly reduced, and all the flavours have blended well - about 30 - 40 minutes. Take individual oven-proof bowls, pour in soup. Slice and toast the French bread, cover each bowl with the toast and sprinkle grated cheese on top. Place each bowl in the broiler at 360F for 10 - 15 minutes, until the cheese bubbles. Serve immediately.
