Chili Pepper Infused Olive Oil
Chili peppers alone contain an impressive list of plant derived chemical compounds known to have disease fighting and health promoting properties. Combined with the health benefits of pure, organic olive oil this possibly becomes the best tasting medicine. Chilies contain capsaicin, an alkaline component which gives the strong, spicy characteristics and is responsible for the known anti-bacterial, anti-carcinogenic, analgesic and anti-diabetic properties. It is also found to reduce LDL cholesterol levels in obese individuals. Chilies, both red and green, contain an impressive 143.7 µg of collagen building vitamin-C per 100g and contain a good amount of minerals like potassium, manganese, iron, and magnesium. Per 100g of red chilies; 240% of vitamin-C (Ascorbic acid), 39% of vitamin B-6 (Pyridoxine), 32% of vitamin A, 13% of iron, 14% of copper, 7% of potassium. We find one of the easiest ways to ensure we get as much chilli as possible is to infuse all our olive oils with it.
Ingredients for one bottle;
8 - 12 Red Chilies (to taste - we like it spicy)
3/4 tsp black/white and/or red whole peppercorns (optional)
Organic, extra virgin olive oil
Place your chilies into the bottom of your bottle. We put about half our chilies in whole, and half crushed - to release more flavour and spice. Add in your peppercorns, if desired and fill with olive oil. Shake slightly, and let sit for 1-2 weeks. The longer it sits, the more intense the flavour and spice. Great for dipping fresh breads, pastas, meats and kale chips!
