Grilled & Baked Aubergine Pizza

1 - 2 Large Eggplants (Aubergines) cut into 2 cm thick slices, lengthwise

Tomato sauce, preferably homemade  

1 - 2 Medium Fresh Mozzarella  

Cherry Tomatoes, sliced

Spicy Genoa Salami, or Prosciutto  

Fresh Basil

Grated Parmesan  

Salt, Pepper, Drizzled Olive Oil

Take your Aubergine slices and drizzle them slightly with olive oil, sprinkle with salt and pepper. Place them on a grill for about 10 minutes, until grill marks begin to form. Remove from the grill, and place your slices onto a pizza pan. Cover with a thin layer of tomato paste, sprinkle with basil, grated parmesan, salami or prosciutto, tomato slices and finally pieces of mozzarella. Bake in the oven at 365F, until mozzarella is melted, bubbling and slightly golden.
