DIY Apple Raspberry Fruit Roll-Ups
2 cups organic apples, peeled and chopped
2 cups organic raspberries
Water, 1/2 cup for every 4 cups fruit
1 Lemon, juiced
Sugar, optional - to taste
Peel and chop apples into small pieces. Place apples and raspberries into a large pot - note that 4 cups of fruit makes roughly one baking sheet of fruit leather. Add in 1/2 cup water for every 4 cups of fruit that are in your pot. Bring to a boil, and then turn heat on low and simmer for about 5-10 mins until fruit has softened and broken down. Mash by hand with a potato masher, and add sugar and lemon juice. Continue to simmer for another 5 minutes, and then transfer to blender, mill or food processor to pulse to a smooth puréed consistency. Pour your fruit purée onto a baking sheet lined with parchment paper, making sure it spreads evenly - about 1/8 inch. During the drying process, the thickness reduces significantly. Place the backing sheets in the oven at the lowest setting (120 - 140F) for about 5 hours, after which you can turn the oven off and let the sheets sit overnight to ensure they are completely dried. You'll know they're ready when they are smooth to the touch and do not clump on your fingers. The fruit leather should peel easily off the parchment paper. To finish, remove parchment (with fruit leather) and roll it over itself to form a long roll, and slice into sections to form each fruit roll-up.
