Dandelion Salad : With Arugula and Honey Lemon Vinaigrette
Stumped on what to do with Dandelions? This simple, fresh salad is a great start to cooking with this supergreen. Dandelion is a natural bitter due to its nutritious properties and therefore would do well with a tangy sauce to cut the slight bitterness, making it a perfect match for peppery arugula.
2 cups fresh Dandelion leaves ( see below how to harvest )
2 cups Arugula
Add any vegetables or fruits you enjoy in your salad.
We recommend :
1 peeled and sliced Avocado
1 thinly sliced Granny Smith Apple
1/2 cup fresh Raspberries
1 cup sliced Tomatoes
Juice of 1 Lemon ( 2 if small )
1 1/2 tbsp Honey
1/2 tsp Salt
3/4 cup Extra Virgin Olive Oil
Mix together lemon, honey and salt until dissolved. Very slowly pour in olive oil while whisking. Stop when you obtain a creamy mixture. Pour over salad and enjoy!
